Meal Planning Monday


After another indulgent week of snacks and various meals out (you can read about that here), I've decided to plan this weeks dinners around Slimming World! Obviously the rest of the family don't need to lose weight, although they can eat the meals too, but I could really do with shifting a few pounds and I aim to lose a stone over the 6 week holiday.

Monday - Fajitas
Tuesday - Mediterranean chicken hot pot (slimming world recipe)
Wednesday - Eating out as child free
ThursdayCheesey chilli beef pie (slimming world recipe)
Friday - Cod in parsley sauce (slimming world recipe)
Saturday - Chicken Tikka Masala (slimming world recipe)
Sunday - Cajun sausage and baked bean pot (slimming world recipe)

I didn't particularly want to have lots of salads as I still enjoy a filling evening meal but all of the above are packed with veg and are far healthier. Hopefully the combination of lower fat meals and being out and about with the kids over the summer will help me to lose weight!

  1. All looks yummy, actually seeing cod in parsley sauce makes me really what to eat that. My husband allergic to fish so we rarely eat it, I love parsley sauce, yummy :-)

  2. I always found success with Rosemary Conely (and just stick to it because it is familiar and easy) but I must say Slimming World recipes always sound amazing. I nabbed a few from my mum, I must go back and get some more! Lovely meal plan. Have a great week :)

  4. I haven't done Slimming World for a while but I always find their meals rather yummy and not too 'diet-like' - good luck with the weight loss. Hubby and I had fajitas last Saturday for the first time in a while. One of my all time faves!
