Pesto Chicken, Spinach and Tomato Tart

With it being half term there are plenty of opportunities to get busy baking in the kitchen and Minxy loves to be hands on when it comes to cooking. She made this delicious pastry tart using Jus-Rol pastry on Monday and it was all gone by the evening! 

It's ideal for a hot lunch or light dinner, you can even slice it and take it on a picnic - it's so versatile!




Ingredients

Cooked chicken (approx 200g)
Pesto (190g jar)
Cherry tomatoes (handful sliced into quarters)
Spinach (approx 10 shredded leaves)
Jus-Roll Puff Pastry (we used a 500g block rolled out to around 9" by 12" although you can buy them pre-rolled)


Method
  • Lightly dust your worktop with flour and roll out the pastry to approx 9" by 12" in size then place on a baking tray
  • In a bowl mix together the chicken and pesto and then spread evenly across the rolled out pastry leaving an inch gap all the way around between the pastry edge and the topping
  • Add the cherry tomatoes and spinach on top
  • Bake for around 20 minutes until the pastry has risen and is golden in colour
  • Scoff!


Seriously simple yet packed with flavour. 

Jus-Rol is really convenient as it saves so much time and effort making your own pastry. It's ideal for those moments when you don't have the time to hang around in the kitchen.

  1. I do a similar tart with tuna, sweet corn, creme fraiche and cheese. To make it even quicker I use the preg rolled pastry sheets! :-)
