Chocolate Brioche Bread and Butter Pudding

Our first Degustabox arrived a few days ago and buried within bubble wrap and pretty tissue paper were many delectable products including some croissants and brioche from Pasquier, a brand we often purchase ourselves. I decided to use the latter in a recipe, something I hadn't made in a while, and with its squishy centre and sweet crisp top, this bread and butter pudding was a simple success.

Ingredients
5 Pasquier brioche
Butter
80g caster sugar
80g chocolate (chopped or grated)
500ml milk
2 eggs

Method
Preheat the oven to 180 degrees and grease an ovenproof dish approx 10" by 12" in size
Slice each of the brioche length ways into three pieces and butter
Place them into the dish angled slightly so they overlap at the bottom sprinkling the sugar and chocolate between each slice as you go
Mix together the milk and egg in a bowl and pour over the brioche evenly
Let it sit for 5 minutes to absorb
Place in the oven for around 45 minutes until golden brown
Scoff!

We added on a few sprinkles too (optional).

As usual the Mini Mes helped with this (hence the very greased dish!) and had a great time doing so. The brioche is great quality and as mentioned previously we regularly buy this through choice to enjoy at breakfast or at lunch. The Mr likes his with crumbed ham and soft cheese whereas I enjoy mine by itself or just will a little butter. Being light and fluffy it is great for this dessert as it really absorbs the milk mixture well and I will use these again for the same recipe in the near future. As an alternative you can always try cinnamon and raisins instead of chocolate.

The croissants from the same brand are moist yet crumbly in texture and we all like these warmed with butter too.

  1. I am very much a puddings person, and love anything chocolate (like the above!) plus a good crumble (apple and blackberry is my, and my son's favourite!)

  2. I loved bread and butter pudding as a child - but I think I only ate it a few times, it wasn't a regular. We are gluten and dairy free here (and soya free) so puddings are rather tricky - at least MY sort of puddings are!
