Reindeer Ginger Biscuits

I've managed to save so much time this year preparing for Christmas by shopping online securely with PayPal, that I've had a lot more spare time to enjoy other things. I've been able to snuggle up and watch movies, do some Christmas crafting and yesterday I shared my delicious triple chocolate brownie Christmas tree recipe. Today I've been baking some more seasonal treats too!





These biscuits are quick and easy to make and the Mini Mes got stuck in transforming something quite simple into something cute and festive.

Ingredients

270g plain flour
1 tsp bicarbonate soda
220g brown sugar
1tbsp ginger
125g butter
1 egg
3tbsp treacle
2 tbsp water (if required)
Icing pen, red melts, pretzels to decorate


Method

  • Preheat the oven to 180 degrees and line 2 large baking trays (the recipe makes approx 50 small biscuits or 25 large)
  • Combine all of the dry ingredients together in a bowl except the sugar
  • In a separate bowl mix together the butter, sugar and the egg then add the treacle
  • Slowly add the dry ingredients to create a dough and add the water at the end if necessary
  • Roll out the dough to approx 1cm thick on a lightly floured surface
  • Use an oval /egg shaped cutter (make a card template if you don't have one) and cut out your biscuits
  • Place the biscuits onto the lined trays and cook for approx 8 minutes until they are just starting to brown 
  • Remove the biscuits from the oven and add your pretzels as antlers, instantly and carefully as they will be hot, by inserting them into the wider end of the biscuits
  • Once cooled, add the red melt as a nose and use the icing pen to create eyes
  • Scoff!
