Mini Makes - Granola Breakfast Bites

We baked Chocolate and Granola Muffins just the other day and this week we decided to make some granola cereal bars which are great as an alternative to a sit down breakfast. Mornings can be busy and sometimes we need to eat on the go for convenience so these are ideal. They are really easy to make too which is always a bonus - I like to spend as little time as possible in the kitchen and as much time with my feet up!

You will need
90g clear honey
 50g brown sugar
55g butter
1 tsp vanilla essence
240g cereal (we used red berry granola)
Extra fruit and nuts - optional

Method

  • Warm a pan on a low heat and add the butter, sugar and honey
  • Stir continuously and just as the mixture starts to boil, remove from the heat
  • Mix in the vanilla and cereal
  • Coat them thoroughly and pour into a dish approx 9" by 12" in size
  • Level the mixture out and set in the fridge overnight
  • Slice into 8 large bars or 24 cubes
  • Scoff

What do you have for breakfast?
