Caramel Egg Brownies

Following on from our caramel cookie cups, these are a nice twist on a classic chocolate brownie using Easter treats.



Ingredients

180g butter
270g caster sugar
3 medium eggs
40g cocoa
80g plain flour
100g dark chocolate
12 mini caramel eggs (we also made them with Creme eggs on a separate occasion)



 
 
 
 
Method
Preheat the oven to 180 degrees
Melt the dark chocolate and butter together in a pan on a low heat and set aside to cool slightly.
In a bowl whisk together the sugar and eggs
Add the cooled chocolate and butter mixture and fold in.
Fold in the cocoa and flour
Add in the caramel eggs and continue to fold the mixture until fully combined.
Pour into a 12" by 9" greased dish and level out.
Cook for 45 minutes and check with a skewer that the brownies are cooked throughout.
Once cooked turn out onto a plate or board and slice into approx 15 equal sized cubes

My reasons to be happy

Minxy did some fundraising earlier this year, she loves animals and helping others, and managed to raise £184 for the David Sheldrick Wildlife Trust. Her favourite magazine Animals and You will be featuring her story again in a round up so both her and I are really pleased she is getting recognition for her hard work - she read 50 books in 50 days! She is now fundraising for Barnardos too with their Care and Share challenge.



Another proud moment for Minxy this week as she got her second badge at brownies. It relates to the first post a little too as it's her Booklover award. She had a trip and tour around the local library yesterday and had to search for specific things. I'm pleased that she is making new friends there and always comes home smiling.



We had a Greek night at the weekend and it was fantastic! My parents were the hosts and my siblings and partners all went along too. I cooked a tomato and feta dish and made Baklava too which was loved by all. We also played poker til around 3.30am which I won having not played in years. It's lovely getting all the family together. We had such fun playing games getting merry and eating lovely food.

Weight loss is slow yet steady but that's what wins the race, right?! Hoping to lose a stone by Christmas and it seems possible.

My reasons to be happy

My reasons to be happy

It's October! This means that Halloween is a little bit closer, as is Bonfire Night and the 'C' word (whispered as if I had said Voldermort). I'm already enjoying wintry foods with lots of slow cooker action, nights snuggled up with the Mr sipping hot chocolate and movies under the blanket - love it!!

Minxy got her first badge at Brownies and I'm so proud of her. She has since received some booklets to fill in towards her next one which I believe is Adventurer. I need to order the uniform now that I'm sure she wants to stick with it. I'm glad that she is making new friendships and having fun.


I seem to have had a sudden boost in motivation, determination and will power to succeed with my diet. I'm doing really well and I have set that 'C' word again as my first goal. My mum has decided to join in with the weight loss too so I feel better supported.
