Calypso Holiday Hacks #1 - Outdoor Family Fun

Wouldn't it be wonderful if there was a list of tried and tested tips and techniques suggested by parents for parents to keep the kids entertained all summer holiday? Thankfully, this year Calypso have created such a thing with their Holiday Hacks app so you can enjoy healthy fun (hopefully in the sun) with the whole family until the return of the school routine! 

We shall be giving 5 different ideas a go throughout July and August to keep the Mini Mes occupied and hopefully this will inspire you to get involved too. What's even better is that the majority of the activities are free!


Calypso Holiday Hacks


The app suggests activities based on the weather and your child's age so you can take a peek out of the window and select something that is suitable on a specific day. The weather here in Northamptonshire has been a bit of a roller coaster recently but as we have had a few nice sunny spells we decided to give this tip a go first:

Picnic Ideas - Mini Frittatas

With 100 days of sunshine expected you might be planning a few picnics in the park or tea times on the terrace and therefore seeking some tasty recipe ideas. Quiche Lorraine is a classic French dish, traditionally made from a savoury custard, which can be served hot or and cold and is perfect for parties or as a light lunch. This crustless version, or frittata in bite size pieces, is equally as delicious but minus the pastry and lower in calories. The mini portions are great for popping into your picnic basket to serve on paper plates in the sunshine and leftovers, if there are any, can go into lunch boxes the following day or into the fridge to be eaten as breakfast on the go.




Ingredients

(Makes 24)
8 medium eggs
200ml milk
60g strong grated cheddar
6 rashers of bacon
6 cherry tomatoes

Rhubarb and Custard Tray Bake

The last few days of glorious sunshine certainly makes me think that summer is on the way and with that in mind I've been in the kitchen whisking up a few treats that are ideal for both lunch boxes and family picnics. 

This delicious tray bake is easy to make and features a traditional flavour combo - rhubarb and custard!

Ingredients

280g Rhubarb
220g caster sugar
250g butter
3 large eggs
200g self-raising flour 
400g vanilla custard
