Coffee and walnut cupcakes



Coffee and walnut cake is one of the Mr's favourites, so the Mini Mes and I decided to bake a batch of cupcakes especially for him - they are very simple to make and ideal for kids.

As we were lucky enough to receive a box packed with some lovely bakeware equipment to review recently, I thought it was the perfect recipe to put the Great British Bakeware bun tray to the test too!



Ingredients:

For the cakes

  • 120g butter
  • 120g sugar
  • 2 eggs
  • 125g flour
  • 1 heaped tablespoon of coffee 
  • granules dissolved in 50ml of water


For the icing

  • 200g Icing sugar
  • 100g Butter
  • Remaining dissolved coffee as required 
  • Walnuts for decorating



Preheat the oven to 180 degrees before you begin and remember to leave the cakes to cool before decorating.
