These are ideal to make on a Sunday to pop in the lunch boxes during the week ahead... that's if they last that long without being eaten! They also go nicely straight out of the oven with a scoop of ice cream.
Ingredients
60g vegetable oil
75g butter
100g caster sugar
110g light brown sugar
1 tsp vanilla extract
1 egg
95g porridge oats
150g self raising flour
150g chocolate chips
Method
Combine the oil, butter and sugar together in a bowl.
Mix in the egg and vanilla extract.
Gradually add in the oats and flour then finally mix in the chocolate chips evenly.
Split the dough into around 22 equal balls, place on a baking try and flatten slightly.
Cook for 12-15 minutes until lightly golden brown.
Scoff!

ReplyDeleteLovely recipe idea! I always have loads of oats in the cupboard, as the kids love porridge on colder morning and they love to make Flap Jack too. These would be a lovely change so might give them a go at the weekend when the kids are off!
