Caramel Core Cupcakes

We haven't been able to get out and about recently due to my back injury so I've been trying to find ways to entertain the Mini Mes without venturing outdoors. Minxy is passionate about baking just like myself and she wanted to make some cupcakes as a treat. I suggested making some caramel for flavouring, after the success of our Mars Bar Cheesecake, and the result was a light and fluffy sponge with a soft core and a sweet creamy frosting. Delicious! 




Ingredients
Cake 
4oz sugar
4oz butter
4oz self raising flour
2 medium eggs



Filling
20g butter
20g brown sugar
30ml milk/cream

Topping
 4oz butter
4oz brown sugar
60ml milk/cream
10oz icing sugar

Method
  • Preheat the oven to 180 degrees and line a cupcake tray with 12 cake cases
  • Make the cakes by mixing together the butter, sugar, flour and eggs in a bowl until smooth before dividing the mixture equally between the cases
  • Bake for 15-18 minutes until risen and golden then allow to cool
  • Make the filling by melting the butter in a pan over a low heat and dissolving the brown sugar with it. Boil for 2 minutes, stirring continuously to prevent it from sticking, then add the milk and heat back to boiling. 
  • Remove from the heat and leave to cool and thicken.
  • Remove the cores from each cake ensuring you don't go all the way through to the case. Add some of the filling and add some of the core back on top
  • To make the topping melt the butter, dissolve the sugar and add the milk as above and then pour into the icing sugar. Mix to form a thick frosting and pipe onto each cupcake
  • Scoff!
