Apple Tarte Tatin

Apple and cinnamon are a match made in heaven and this relatively simple dessert will soon become a family favourite - it goes perfectly teamed with a scoop of soft vanilla ice cream now that spring has arrived!

Apple Tarte Tatin recipe

Ingredients
(serves 4)

50g butter
50g golden caster sugar

1 tsp ground cinnamon
2 large Bramley apples
250g puff pastry

Method
  • Preheat the oven to 180 degrees
  • Peel the apples, remove the core and cut each apple into 12 evenly sized slices
  • Melt the butter in a pie plate over a low heat and then mix in the sugar
  • Once bubbling, add the cinnamon and give it a good stir

  • Carefully arrange the apple pieces on top in a neat circular pattern
  • Let the apples soften for around 10 minutes and use a spoon to scoop over the exuded juices if required

Add the additional slices in the centre in a similar pattern

  • Roll out your puff pastry so it is just a little larger than the size of the pie plate and use a fork to prick it a few times
  • Remove the pie plate from the heat and place the pastry over the top, tucking the overhang into the edges of the pie plate
  • Place the pie plate in the oven and cook for 25 minutes, until golden and well risen
  • Remove from the oven, run a knife around the rim to loosen the pastry, place a plate on top of the pie plate and flip it over to release
  • Scoff!
