Lemon Drizzle Loaf Cake {Creative Summer 10}

This recipe has very quickly become a family favourite and Minxy loves to bake this delicious cake by herself - she has made two in the past week alone!

The lemon provides a nice citrus kick without being overpowering and the icing seeps into the sponge to keep it soft and moist. It's so simple and ideal for afternoon tea with friends.


Lemon Loaf Cake

Ingredients

175g butter
175g caster sugar
3 eggs
8 tbsp lemon juice
175g self-raising flour
100g icing sugar


Method
  • Preheat the oven to 180 degrees and line a loaf tin with grease-proof paper
  • Mix together the butter with the caster sugar in a bowl
  • Add in the eggs, sift in the flour and add in half of the lemon juice
  • Pour the mixture into the loaf tine and bake for 30-35 minutes until golden on top and firm
  • Leave to cool slightly in the tin - do not remove it yet
  • To make the icing mix together the remaining lemon juice with the icing sugar in a bowl
  • Use a knife to make some holes in the loaf cake and then pour on the icing
  • Place in the fridge to set 
  • Remove from the tin, then slice to serve
  • Scoff!

  7. You can't beat a lemon drizzle cake. I remember it being a great treat when we visited my Nan and she'd bring one out at teatime!
