Egg Curry - A Winter Warmer

With plenty of rain and snow expected over the upcoming weeks, you may be seeking some comforting family meal suggestions and this curry is ideal. Similarly to my other Eggcentric recipes it is quick and easy to make, it can be prepared and cooked in less than 30 minutes, and it's a great source of protein provided by the British Lion eggs. It is incredibly aromatic and has a mild heat to it which is wonderful to enjoy on colder days in particular - like the weather we are expecting.

Spanish Omelette Recipe

As our little ones prepare for the return of school and the leaves start to turn golden brown, dining alfresco will soon be replaced with stews, soups and hearty autumn meals. Lunches of sandwiches will be swapped to something a little warmer and this is the perfect time to whisk up omelettes aplenty - you can team them with salad on the days where the sunshine makes an appearance or with thick warm bread smeared with butter when it's a little cooler.

They are incredibly quick and simple to make too which is always a bonus as busy parents.

Spicy Egg One Pot

This year as an EggCentric Ambassador for British Lion Eggs along with the British Egg Information Service, I will be sharing lots of  delicious, yet quick and easy, egg based recipes. They are so often used within dishes but rarely star as the key element so it's time to give them the spotlight they so rightly deserve. After all, they are packed with vitamins, they make a great alternative to your usual protein at dinner and they are relatively low cost too. 

This recipe can be created in one pan in under half an hour, saving more time to spend with your family, without compromising on taste! The peppers and tomatoes provide so much flavour while the chilli gives a little added kick. I cook a lot of Mexican style food including fajitas and tacos, as I like that everyone can just dig in and combine various foods together, and this can be set in the centre of the table for the same. 


Spicy Egg One Pot Recipe


Ingredients

2 onions
2 cloves of garlic
2 peppers (we used green and yellow)
1 red chilli deseeded and sliced 
1 tsp chilli powder
400g passata 
200g chopped tomatoes
6 eggs


Method

Warm the pan over a medium heat and add in the onions, peppers, red chilli and garlic. Let it soften for a few minutes while stirring.
