With it being half term we seem to have a bit more time on our hands in the mornings to enjoy breakfast and therefore the Mini Mes have been requesting their favourite, pancakes. They are so simple and you can whisk some up in a matter of minutes. They go nicely savoury with ham and cheese or sweet with juicy fruits, sugar and lemon - yum!

  • 4oz plain flour
  • 1 egg
  • 250ml milk
  • Oil for cooking

  • Add the flour to mixing bowl and create a well in the centre. Then tip in the egg.
  • Beat the mixture continously with a whisk and gradually pour in the milk until all the lumps are gone.
  • Heat a pan with a small amount of oil and tip in some of the mixture to coat the base of the pan thinly.
  • Allow to cook on one side for a minute and then flip the pancake to the alternative side.
  • Serve with scrummy toppings!

  4. What sorts of toppings do you suggest? My husband likes lemon juice, but I'm a bit naughtier with maple syrup. I bet some kind of berry compote would be lovely too.
