2 eggs
1 tsp vanilla essence
For the frosting
250g icing sugar
80g butter
25ml milk
4 drops vanilla essence

150g white chocolate
3 drops green food colouring
Method
- Preheat the oven to 170 degrees.
- Combine the ingredients together to make the cake mixture
- Divide the mixture between 12 cake cases in a baking tray
- Bake in the oven for 12-15 minutes until light brown
- To make the tails, melt the white chocolate with a few drops of green food colouring and drizzle thinly onto greaseproof paper in the shape of mermaid tails (we made a stencil, around 2 inches in size, and placed it underneath the paper).
- Allow to set in the fridge for a 10 minutes
- To make the icing combine all of the ingredients and then pipe it onto of the cooled cupcakes.
- Use a knife to create scales on the tails and then slot them on top of the icing
- Scoff!
Mermaid Handprint Pictures
Using painted hands as the hair and tail this is a really fun yet simple activity to create an underwater scene.
Equipment
Thick paper
Paint
Paint brush (not essential)
Sequins and glitter (not essential)

Sequins and glitter (not essential)
Method
Cover one hand in paint and push down firmly on to the top of the paper to create the hair.
You can do this twice to make the hair appear thicker and more natural with fingers spread.
Add a head and body onto the picture using your fingers or a paintbrush
Paint the side of your hand and part of the lower arm.
Press firmly onto the paper from the body downwards, tilting the hand to one side to create half of the tail.
Repeat tilting the hand to the opposite side.
Add any glitter or sequins now to decorate and add a bikini and facial features using your fingers or a paint brush.
Allow to dry

The Little Mermaid Movie
Another Disney favourite of mine from way back in 1989 (that makes me feel old despite only being 4 then!). This tale is about a 16 year old princess mermaid named Ariel that wishes to become human.
She follows her heart, after spotting Eric in a shipwreck and saving him from drowning, and heads to Ursuala to make a deal. Ariel is transformed into a human for three days in exchange for her voice, which Ursula traps in a nautilus shell. Ariel must receive the "kiss of true love" from Eric within these three days or she will transform back into a mermaid and belong to Ursula forever.... will see do it in time?!
