Now that the summer has finally arrived and doesn't seem to be in any hurry to disappear, it's time the BBQ was dusted off, the patio chairs were set out and the fresh foods were spread across the table to be enjoyed under the sunshine.
This chickpea salad is quick and easy to create and very versatile in the way that you can edit it with ease to suit your taste. I've sent the Mr off to work with it a few days this week as a lighter alternative to his sandwiches pork pies and pasties.
Ingredients
400g chickpeas (cooked)
Cherry tomatoes (about 8)
Feta (30g crumbled)
Chorizo (50g cubed)
1 tbsp chilli powder
2 tbsp lemon
2 tbsp olive oil
1 tbsp dry basil/ handful of fresh, chopped
Fresh Gourmet Crispy Onions
Black pepper
Method
Slice the tomatoes in half and place in a bowl with the lemon, olive oil, and chilli.
Add the chickpeas, chorizo and basil then toss to spread the flavour evenly.
Spread the feta over the top followed by a few crispy onions and add black pepper to taste.
Scoff!!
In the picture above I added a layer of green leaves as a base for extra texture but this is optional.
We received 4 packets of the Fresh Gourmet salad toppings, that have been a huge hit in the US and are now available in the UK, to try and I feel the crispy onions compliment this dish nicely. I'm saving the croutons to make some soups in early Autumn once the weather has cooled down a little as they will be just perfect for that.
The resealable bags are really useful and keep the product fresh in between use.

ReplyDeleteI always do a basic chickpea salad, as an accompaniment to when we do a Raclette - I just do chickpeas, salt, black pepper, lemon juice, olive oil, garlic and shredded basil - delicious! So fresh tasting! Cheap and quick to rustle up with lamb steaks etc
