With calorie counting well underway and being a few pounds lighter already, I've been trying to think of some meals that are both filling and healthier for us to enjoy. After all, there is no use eating a salad if you will be hungry and reaching for the biscuits five minutes later is there!
This meal can be slow cooked so it's ready for when you return home from work/college/the gym etc. With couscous and vegetables taking just a few minutes to heat through, I've found these make a great accompaniment. This should prevent you from wanting to raid the fridge like Pac-Man afterwards!
It's quite similar to my sausage casserole recipe which is a family favourite.

Ingredients
400g beef, strips
2 onions, diced
1 red pepper, cut into chunks
100g chorizo ring cut into 1cm chunks
1tsp garlic puree/2 cloves
1tbsp chilli flakes
1tbsp cumin
400g passata
200g chopped tomatoes
1 beef stock cube
1tbsp parsley, chopped

Method
- Cook the beef until brown in a pan over a low heat and then transfer it to your slow cooker/casserole dish
- Add the chorizo, onion, pepper and garlic to the pan and cook it for about 5 minutes, until browned
- Add the chilli and cumin then heat for a minute. Add the tomatoes, passata and stock cube and heat for a further minute, stirring continuously, before transferring it to the slow cooker/casserole dish
- Cook in the slow cooker on a low heat for 5 hours, high heat for 2 hours or in the oven at 150 degrees for 2.5 hours
- Add the parsley on top to serve (or put it in with your couscous as I do)
