We baked a traditional Victoria sponge cake at the weekend and I had an idea to make a little more cake mixture and pop it into a tray to slice then serve as cubes. After a quick rummage in the cupboards I decided to use some leftover nuts for a crunchy topping and some berries from the freezer for a boost in flavour.

Ingredients
4oz self raising flour
4oz caster sugar
4oz butter
2 eggs
1/2 teaspoon vanilla essence
Summer berries
Almonds
Icing sugar to dust (optional)
Method
This is ideal for picnics and lunch boxes or warm served with ice cream as a dessert.
It's delicious yet so quick and simple to complete.
- Preheat the over to 180 degrees
- Cream together the sugar and butter in a bowl
- Mix in the eggs and vanilla essence
- Sift in the flour and combine
- Pour the mixture into a lined backing tray, approx 9" by 12", and level
- Add the berries on top and sprinkle over the almonds
- Cook for around 35 minutes until the sponge is risen and golden
- Allow to cool and dust with icing sugar
- Slice into 15 pieces (more or less if you wish)
