Mini Makes #6 - Oreo, Caramel and Chocolate Tartlets

You know when you want to create something delicious but you just don't have the time, energy or skills to make a masterpiece, well this recipe is the answer to your prayers! You only need 5 ingredients for these delicious Oreo, caramel and chocolate desserts (or easy peasy pudding pies as I call them) and they are so incredibly simple to do that even a novice, or the kids, could give them a go.

This recipe will make 3 individual sized tarts but you can make a bigger version by multiplying the ingredients by 3 and using a 10" dish instead.




You will need
12 Oreo biscuits
5 tbsp butter
45g brown sugar
100ml double cream
125g dark chocolate 



Method
  • Crush the biscuits to form a crumb. I placed them into a plastic bowl and used the end of a rolling pin to break them up but you can use a blender.
  • Melt half of the butter gently in a pan over a low heat and add this to the biscuit crumbs. Stir thoroughly to ensure they are all coated.
  • Evenly divide the mixture into your three tart tins (4"/10cm) . Pat down the mixture and work it up into the sides so it's level.
  • Place the three tins into the fridge for around 30 minutes to set. Alternatively use the freezer for around 10 minutes.
  • Melt together the other half of the butter in a pan with the brown sugar, over a low heat, stirring continuously. Mix in 20ml of double cream until smooth and then allow to cool for a few minutes.
  • Pour the caramel into into the tart tins evenly to form a layer in each then pop them in the fridge for around an hour until nearly set.
  • Place your chocolate in a bowl. Warm through the remaining cream in a pan over a low heat and pour the cream over the chocolate to melt it. Stir to create a thick ganache. Once cooled carefully layer this on top of the caramel in the tart tins so it it level with the top of the crust
  • Allow to set in the fridge completely.
  • Scoff!

For a more elegant finish you can finely grate over some honeycomb to form a golden dust! I generally sprinkle over a little icing powder however.

Once cut the caramel will start to ooze out. We love this as it looks far more impressive than it actually is.
