Back To School Breakfasts From Little Dish (PLUS Your Chance To Win)

With many children going back to school this week, the morning routine returns and it's important to fuel your little ones with a good breakfast to kick start the day. Although the usual pancakes, toast and cereal are of course fine, it's nice to have something a bit different and these lovely ideas from the new Little Dish Cook Book may do just the trick!
 
 
 

Low Sugar Granola
 
240g rolled oats
50g desiccated coconut
100g mixed nuts, coarsely chopped
2 tablespoons olive oil
6 tablespoons maple syrup
1 teaspoon ground cinnamon
1 medium free-range egg white
100g mixed fruit
 
  1. Preheat the oven to 150 degrees/gas mark 2. Line a large baking tray with baking parchment
  2. In a large bowl, combine the oats, coconut, nuts, oil, maple syrup and cinnamon. In a separate small bowl whisk the egg white until frothy and stir it into the granola mixture.
  3. Spread the granola mixture onto the prepared tray. Bake for 45 minutes, turning once during cooking, Set aside and allow to cool completely.
  4. Break up the cold granola and stir in the dried fruit, if using. Store in an airtight container for 2-3 weeks.
 
 
 
Fruit Yoghurt Pots
 
180g Low Sugar Granola (recipe above)
180g vanilla or Greek yoghurt
180g mixed fresh fruit (berries, mango, chopped banana etc)
 
  1. Divide the granola equally between 6 small pots or ramekins. Spoon the yoghurt equally between the pots and top with the fruit. Serve immediately.
 
 
 
Cinnamon French Toast
 
2 medium free-range eggs
1 tablespoon milk
Pinch of ground cinnamon
Knob of butter
4 slices of bread (wholemeal, sourdough or fruit and nut bread all work well)
Apple compote or maple syrup, to serve
 
  1. Crack the eggs into a large bowl. Stir in the milk and beat with a fork. Add the cinnamon
  2. Place the butter in a large frying pan over a low heat
  3. Dip a slice of the bread into the egg mixture. Turn over the bread and dip it again to make sure it's well covered with the egg mixture. Let the excess egg drip off the bread and then put straight into the frying pan. Repeat with the remaining slices of bread, adding more butter to the pan if needed.
  4. Increase the heat to medium and cook each slice for 2 minutes on each side or until golden. Carefully remove from the pan and serve with apple compote (recipe in the book) or maple syrup

  1. One of my favourite recipes is homemade macaroni cheese - all my four children love it and I always have at least one helper to make it! We add sliced tomatoes and extra grated cheese on the top and it goes under the grill to finish off! Yummy! A fast and easy recipe for any time of year!

  4. Our favourite recipe is our homemade Shepard's pie! We use organic potatoes and we mash them by hand. We also use organic vegetables and it is so easy to make. Plus, the kids absolutely love it :)

    Love overnight oats for brekky - 30g porridge oats layered with yoghurt and fruit then leave in the fridge overnight - stir the pot in the morning and you're good to go.

  38. My favourite is my Thai Green Curry. It's made from scratch but is actually really easy and quick and tastes so much better than a sauce from a jar. That said, I saw Cheese and Tomato Bread and Butter Pudding mentioned in previous comments. That sounds amazing - I'm off to look for a recipe for that.

  48. Pasta Arabiatta, so easy, 200g Pasta, smokey bacon, 2 garlic cloves, 1/2 tea spoon italian seasoning herbs, 1/4 teaspoon chilli flakes, one tin chopped tomatoes. Fry the bacon and cloves. Then simmer the chopped toms, add the chill flakes & herbs. Add cooked bacon and garlic cloves. Drain the cooked pasta and mix it with the arabiatta sauce. So simple and so tasty, and quick too :)!
