Madeira Cake Recipe

 
 
 
I'd not made a Madeira cake in quite a while but on a rainy day recently Minxy scrolled through the cook books and I was happy to see her select a recipe for one to adapt. With hints of lemon and a super soft sponge it's ideal for afternoon tea. It's also incredibly easy to make so it's ideal for children to bake themselves.
 
 
Ingredients
 
170g butter

170g caster sugar
210g self raising flour
3 eggs
Zest of 1 lemon and 1 tbsp of juice
 
 
Method
  • Preheat the oven to 180 degrees and line a loaf tin
  • Cream together the butter and sugar then mix in the eggs, zest and lemon juice
  • Sift in the flour and combine to make a smooth mixture
  • Pour into the loaf tin and cook for around 40 minutes until golden
  • Scoff!
