Chewy White Chocolate Cookies {Creative Summer 5}

The Mini Mes love to whisk up a batch of warm and chewy cookies at the weekend and this quick and easy recipe has become a firm favourite. They are crisp on the outside with a soft centre and the white chocolate adds a little extra sweetness. 

We do however like to add in some raspberries or raisins on occasions, just so they feel a little less naughty!

125g brown sugar
125g butter
1 egg
225g self raising flour
150g white chocolate

  • Preheat the oven to 180 degrees and line a large baking tray. 
  • Mix together the butter with the sugar in a bowl and then mix in the egg
  • Sift in the flour and fold to create a soft dough
  • Chop the chocolate into small chunks and then add them to the dough, mixing well so they are evenly distributed
  • Divide the dough into approximately 18 balls, place them on the tray and push them down a little to flatten the tops. 
  • Cook for 8-10 minutes - you may need to do two batches
  • Leave to cool completely and store or serve warm, whichever you prefer
  • Scoff!

-  Drizzle over some melted white chocolate at the end
- Cook for an additioanl 2 minutes if you like your cookies crunchy
- Leave a gap between each cookie on the tray as they do spread as they cook
