Although France is generally seen as the country of love, I adore Italian food. Some of my fondest memories with the Mr took place at our favourite restaurants; Papa Cino's, Prezzo and Pizza Express.
This quick and easy carbonara is a great idea for a Valentine's Day meal and although it won't guarantee romance this February, or a Lady and the Tramp meatball sharing moment, it is definitely a delicious pasta dish to dive into.
This quick and easy carbonara is a great idea for a Valentine's Day meal and although it won't guarantee romance this February, or a Lady and the Tramp meatball sharing moment, it is definitely a delicious pasta dish to dive into.
Ingredients
(Serves 2. Approx 520 calories per portion)
100g dry linguine/spaghetti
4 egg yolks
60ml double cream
4 rashers of bacon
Parmesan
Black pepper
30g cheddar (optional)
Method
- Bring a pan of water to the boil and add your pasta
- Add the 4 egg yolks and cream into a bowl and whisk until combined
- Cook the bacon on a low heat until it's just crispy then set to one side
- Once the pasta has cooked, drain and return to the hob on a low heat
- Add the sauce (cream and egg yolks) immediately plus the bacon and gently heat through ensuring the bacon is spread out evenly
- Add a little black pepper and then plate
- Sprinkle your grated Parmesan on top
Tip: If you require a cheesier carbonara add in some grated cheddar when you mix the ingredients together.

An Italian friend used to make carbonara for his colleagues, of which I was one. I've never tasted better. Might give this a try, though.
