Spanish Omelette Recipe

As our little ones prepare for the return of school and the leaves start to turn golden brown, dining alfresco will soon be replaced with stews, soups and hearty autumn meals. Lunches of sandwiches will be swapped to something a little warmer and this is the perfect time to whisk up omelettes aplenty - you can team them with salad on the days where the sunshine makes an appearance or with thick warm bread smeared with butter when it's a little cooler.

They are incredibly quick and simple to make too which is always a bonus as busy parents.


Spanish Omelette


Ingredients

(Makes 24)
Olive oil or butter
8 medium eggs
1 onion, diced
2 cloves of garlic
1 red pepper
400g potato
Salami or chorizo (optional)
Sprig of rosemary

Method
  • Bring a pan of water to the boil
  • Cut the potatoes into small chunks and add these to the water. Cook for around 8 minutes until softened slightly then drain

  • Warm a frying pan over a high heat and add just enough oil to cover the base, or a knob of butter
  • Place the potatoes into the frying pan and cook for a few minutes before adding the onions, pepper, meat (we use a Peperami), garlic and rosemary

  • Reduce the heat to the lowest setting
  • Whisk the eggs in a bowl and add these to the pan

  • Give everything a quick stir to ensure the egg is evenly distributed and then leave it to cook through
  • Cook the omelette for around 15 minutes until there is no liquid egg on the surface

  • Flip the omelette over (you can place a plate over the pan and turn it to prevent it from breaking) and cook for another minute to brown
Scoff!



This is another incredibly versatile recipe so if you're hoping to add a little more veg to the kid's diet you can easily sneak a few extras in! It's delicious served straight from the pan but you can also let it cool, slice it up and pop into their lunch boxes.

  1. I'm following the Slimming World plan so eggs are a big part of my diet now as they are "free" I can pretty much eat all of this too - hurrah! I love finding new recipes to add so I'll be using this for my lunch xx

  26. We make this quite a lot as we often have left over potatoes and couple of rashers of bacon in the fridge. You can literally put anything in it. My son made it to add to his cookbook he is making.

  38. I absolutely adore Spanish omelettes! They taste amazing, not like our typical flat squishy omelettes at all. They are really filling, easy to make and very, very tasty!
