Crispy Spinach and Feta Pie

We recently returned from a family break in Kefalonia and although most of our holiday highlights involve sunsets on the beach and trips to some beautiful attractions, we certainly can't forget the amazing food we consumed.  While in Fiskardo, a beautiful harbour village on the Northern tip of the island, we stopped off at a bakery and The Mr picked up a pastry. For the remainder of our week away he mentioned went on and on about how delicious it was, so I decided to recreate the same at home.

Riverside Lifestyle *Review and Giveaway*

Meal Planning Monday

Firstly, happy birthday to the Mr! 31 today. Also a big happy birthday to my brother and uncle who grow a year older today too - March is certainly busy for celebrations. I hope he loves his presents (which include tickets to Nitro Circus, Gentleman Jack Whisky, clothes, chocolates, movies etc) although as usual he gave me no ideas as to what he would like! If he wants something he will generally buy it himself so I was clueless as always. We are having a meal out later in the week to celebrate when all the family are available to join us rather than today although a sneaky fried breakfast out may be on the menu.

Our plans for the weekend were cancelled due to the heavy snow so unfortunately we will need to reschedule our trip to Drayton Manor for another time, although we still enjoyed picnic style food at home with sun hats and Batman costumes....

This week we will be having...

Slow cooked lamb stew and dumplings
Salmon and gnocchi bake (using some lovely produce from Fish is the Dish)
Chicken and ham pie with veg
Meatball bolognese
A midweek meal out for the Mr's birthday when all the family are available to join us


I'm hoping the weather improves by next weekend or the Easter bunny might get frost bite! We have a few treats to bake this week with the arrival of the Easter holiday and we thoroughly enjoyed baking caramel egg cookies and creme egg brownies last week.

Cookie slabs



A delicious treat, great for lunch boxes, fab dunked in your cuppa or perfect for your picnic these cookie slabs are complete within 30 minutes! Another easy recipe that's ideal for the kids.

Ingredients

220g butter
220g brown sugar
300g plain flour
200g chocolate

Method

  • Preheat the oven to 180 degrees
  • Combine the butter and sugar until fluffy
  • Stir in the flour to form a dough
  • Cut the chocolate into chunks and add to the dough. Stir it in evenly

  • Grease a tray approx 10" by 12" and add the dough. Spread it out to the edges.
  • Cook for around 20 minutes (slightly more or less depending upon how you like your cookies).
  • Slice and serve.

Amazing served warm with ice cream!

Project 366, 155/366 - Picnic

Despite the miserable weather putting a stop to our planned big lunch at the country park, we decided to have a mini picnic indoors instead and the Mini Mes invited along some of their bears!

Jubilee Jam Tarts


Having a Jubilee party? These Jubilee themed jam tarts are delicious and would look great laid out on your picnic blanket to share and enjoy. They are very simple to make so the kids can help out too!

You can add crowns to make them Jubilee themed!
Ingredients
5oz plain flour
2.5oz butter
1/2 tsp salt
Jam
Egg yolk (optional)

Makes around 12 tarts

Method
  • Preheat the oven to around 180 degrees.
  • Rub the butter in with the flour and salt until it looks like breadcrumbs and then add a small amount of water (around 2/3tbsp) to form a stiff dough.
  • Flour the surface lightly and roll out the dough to around 3mm. Cut into rounds with a 7cm cutter and place in a cupcake tin.
  • Add a tsp of jam to the centre of the rounds
  • With the leftover pastry dough cut out crowns and place on top of the jam.
  • If you want to give the tarts a shine you can brush them in egg yolk at this point.
  • Cook for around 15 minutes.
  • Scoff - Cooled or lovely warm with ice cream!
